Happy Valentine's Day!

To be honest, I am not a fan of Valentine's Day. I love romance, but I do not care for the cliche. However, because I know many of you are totally into this celebration, I think that this recipe is a good way to share the love of Valentine's Day (something that should also be done year-round). With Valentine's Linguini, you have the chance to impress your significant other without having to go to an overcrowded restaurant. Win!

I love to cook, so most of these ingredients will always be in my kitchen. If you do not have a lot of time - but want to look like you took the time to create a beautiful Valentine's dinner - then is a good recipe for you. It is quick, easy, and most of all delicious. You cannot deny the value of cooking for someone special over going to a restaurant, no matter how fancy this could be, a surprise homemade dinner will always win the day.

By the way if you are not into seafood, then you can skip the shrimp. But seriously, why would someone remove shrimp? Except for a food allergy, do not skip the shrimp!

This dish is best shared with the love of your life. Enjoy!

Ingredients:
8 ounces of linguini
½ pound of large shrimp. Peeled and deveined
1 garlic clove, minced
1 tablespoon unsalted butter
¼ cup fresh basil
¼ cup cherry tomatoes
2 tablespoons of carpers
1 cup of fresh baby spinach
1 tablespoon red pepper
The Juice of half of lemon
Bari’s Arbequina Olive Oil
Salt and Pepper to taste
Directions:
Step 1: Prepare pasta
  • Cook pasta according to package
  • Drain and transfer to a large mixing bowl
  • Drizzle 3 tablespoon of olive oil
  • Add salt and pepper
  • Add the fresh baby spinach and carpers
  • Cut the cherry tomatoes in half and add to the pasta
  • Mix well, set aside. (The spinach and cherry tomatoes will cook just enough with the remaining heat in the pasta)
Step 2: Prepare shrimp
  • In a large skillet melt the butter with 1 tablespoon of olive oil
  • Add shrimp and garlic
  • Cook until shrimp is pink, about 3 minutes
  • Then, add red pepper flakes, 1 tablespoon lemon juice, salt and pepper.
Step 3: Plate dish
  • Arrange in a serving plate the pasta
  • Then, add the shrimp and garnish with more olive oil, basil and parmesan cheese.
