There is no need for a fork or knife with these hands-on Balsamic Glazed Chicken skewers. They are fun to make and great to share with friends and family over a mid-week dinner. So delicious!

Ingredients:
2 lb. boneless chicken thighs
½ cup of Bari’s Pomegranate Balsamic Vinegar
¼ Cup Bari’s Orange infused Olive Oil
¼ cup low sodium soy sauce
¼ cup of raw honey
2 tbs. of brown sugar
2 minced garlic heads
1 teaspoon of lemon zest
1 teaspoon lemon juice
½ teaspoon of salt
½ teaspoon of blk pepper
Fresh cilantro for garnish
Directions:
Step 1: Prepare Balsamic Reduction
  • To make ahead Balsamic reduction you will need a medium size shallow saucepan and add all the ingredients except the chicken and cilantro (obviously) and bring to a boil over medium high heat.
  • Reduce to low heat and simmer stirring constantly for about 15 minutes, remove from pan and store on a container. You can make these 24 hours ahead this will give time to the ingredients to fully caramelized and create a thick sauce.
  • Soak skewers in water for about 20 minutes.
Step 2: Prepare Chicken
  • Wash the chicken thighs, pat dry and remove excess fat.
  • Sliced the chicken lengthwise
  • In a large mixing bowl mix chicken and balsamic reduction
  • Thread chicken thigh pieces onto skewers
Step 3: Cook Chicken
  • Grill on a medium high heat for about 8 minutes
  • Turn each side to cook evenly
  • Remove
Step 4: Serve
  • Garnish with chopped fresh cilantro and serve immediately.
