This is an easy, delicious recipe for Bruschetta!

3 teaspoons balsamic vinegar
2 tablespoons olive oil (preferably high quality, I used Bari)
6 Roma tomatoes, diced
2 garlic cloves, finely minced
3/4 teaspoon salt
1/2 teaspoon pepper
crusty Italian type bread, cut into slices
garlic olive oil (again, quality is important, I used Bari)
fresh basil, torn into bite size pieces
Mix the balsamic vinegar and olive oil in a medium sized bowl (not a metal bowl). Stir in the Roma tomatoes, garlic, salt, and pepper. Set aside to let the flavors blend together. Meanwhile, brush garlic olive oil on the sliced Italian bread. Broil on high until browned and slightly crisp. Spoon the tomato mixture on top of the bread, and top with the fresh basil. Enjoy!
