Watermelon Salad
- 1/2 Cup Red Onion Sliced Very Thin
- 2 Tablespoons Fresh Squeezed Lime Juice
- 8 Cups Watermelon Cubed
- 1/2 Cup Sliced Black Olives
- 1 Package Crumbled Feta Cheese
- 1 Cup Fresh Mint Chopped
- 4 Tablespoons BARIĀ® Fruity Extra Virgin Olive Oil
Mix onion and lime juice together in a bowl and set aside. In another bowl, combine watermelon, olives, cheese, and mint. Add onion and lime juice mixture. Drizzle olive oil over ingredients and toss salad to blend.
Refrigerate until ready to serve. Rib Eye Steaks and Grilled/Roasted Vegetables go great with Watermelon Salad
