Tandoori Roasted Cauliflower with Lemon Hummus



Vegan-lovers! Feast your eyes on this beautiful bouquet of Tandoori Roasted Cauliflower with Lemon Hummus.  This simple combination of vegetable and protein eats like a meal for two; or can be served as a heavy appetizer for guests with a side of pita bread.  The blend of Tandoori Masala and Lemon provides a perfect balance of curry spice with citrusy sour flavors in one satisfying bite.

 To get started you’ll need the following ingredients:

Tandoori Roasted Cauliflower

1 large – Cauliflower head

1 tablespoon – Ground turmeric

1 tablespoon – Curry powder

1 tablespoon – Paprika

1 tablespoon – Cayenne pepper

½ tablespoon – Ground cloves

½ tablespoon – Ground sage

½ cup – Fresh chop cilantro

¼ cup – Water

½ cup – Bari’s Tandoori Masala Olive Oil

Salt and pepper to taste



Get Started: Heat oven to 400 degrees.

Step 1: Prepare Cauliflower

·         Cut cauliflower leafs off with the bottom of the stem, making sure to NOT cut any of the florets.

·         Rinse the cauliflower

·         Mix the spices together

·         Then, combine spice mix with Bari’s Tandoori Masala Olive Oil, cilantro, salt and pepper.

·         Cover all the cauliflower with the mixture.

·         In a shallow baking pan, pour 1/4 cup of water and place the cauliflower in the middle. (the water will help steam the cauliflower)

·         Bake until tender for about 1 hour.



To get started you’ll need the following ingredients:

Lemon Hummus

2 cans – Chickpeas

1 tablespoon – Paprika

2 large – Lemons for juice


¼ cup – Tahini Sauce

2 – Garlic cloves

¼ cup – Water

½ cup – Bari's Lemon infused Olive Oil

Salt and pepper

Fresh cilantro and Sesame seeds for garnish



Get Started: Heat oven to 400 degrees.

Step 1: Prepare Hummus

·         Drain the chickpeas and make sure to rinse them well.

·         Peel the skin off. (note: this is very important to have a smooth consistency)

·         In a food processor, add all the ingredients with the peeled chickpeas.

·         Blend until smooth, add more of Bari’s Lemon Olive Oil as needed.

·         Place Hummus into a bowl.

·         Garnish with sesame seeds, cilantro leafs and drizzle with Olive Oil.

Enjoy dipping the cauliflower into the hummus as an alternative to bread or chips!
