Stuffed Baby Portobello Bites

A taste of Holiday heaven.


The Holidays are here. Family and friends have gathered together.  Hours have been spent to prepare a wonderful banquet of food. Everyone smells the delicious aromas that fill the air.  They are consumed with the urge to grab a quick bite to eat around the kitchen and try to sneak a piece of the main meal – often times before the table has been properly set.  How rude!?

What can you do to curb the early grumblings of a holiday feast? 

Share with your guests Stuffed Baby Portobello Bites.  A wonderful holiday appetizer that prepares the taste buds before the main event; while giving your friends and family a way to keep their hands to themselves and away from the dinner you have spent countless hours preparing – that is until the table is set and you are ready to serve.

 To get started you’ll need the following ingredients:


Two packages of Baby Portobello mushrooms

1/2 cup frozen chopped spinach (make sure to thaw)

1/2 cup Panko bread crumbs

1 package of cream cheese softened

1/2 cup shredded Parmigiano-Reggiano cheese

1/4 cup of red bell peppers diced

1/4 cup chopped parsley

2 garlic cloves finely chopped

4 tablespoon Bari's Lemon Olive Oil

Bari's Orange infused Balsamic Oil to drizzle

Salt and pepper to taste



Set the oven at 375 degrees.


Step 1: Prepare mushroom mixture

a)    First make sure to wash the mushrooms to remove any dirt

b)    Remove the stems

c)    Finely chop the inside of the mushrooms and set aside (use a food processor or a knife)

d)    Heat up skillet with Bari’s Lemon Olive Oil

e)    Add garlic, chopped mushrooms stems, red pepper and thawed spinach until all is well incorporated

Step 2: Prepare cream cheese mixture

f)     To the softened cream cheese add the bread crumbs, Parmigiano-Reggiano and Presley

 Step 3: Combine Mixtures

g)    Combine mushroom mixture with cream cheese mixture, add salt and pepper (mix well)

Step 4: Prepare Mushrooms

h)    Place the mushrooms in a baking sheet

i)     Drizzle with the Bari's Lemon Olive Oil (before you insert the mixture)

j)     Using a spoon, stuff the mushrooms with combined mixture

k)    Drizzle a little bit more of Bari’s Lemon Olive Oil.

l)     Bake for 40 minutes

m)   Remove from oven

n)    Drizzle with Bari’s Orange infused flavor Balsamic Vinegar before serving
