 New Year’s Eve Triple Luck Appetizers

Celebrate the happiest of New Year’s in 2017!

 

One of my favorite New Year’s Eve traditions is to enjoy good food with friends, share memories from the year and talk about the hopes and dreams for the coming year.  Sometimes our ideas of grandeur need a little extra luck.  If you are ringing in the New Year at our house, then you are welcome to join us in Las Doce Uvas de la Suerte or The 12 Grapes of Luck

At midnight we eat one grape for every stroke of the clock in the first twelve seconds to bring luck for each month of the year!  This tradition was formalized in Spain by a group of grape farmers to better sell grapes from a huge harvest – perhaps a tradition we might consider for olives!  According to tradition and superstition this leads to a year of prosperity. As a child we enhanced the tradition, by eating the grapes and walking around the block with an empty suitcase in hand.  The idea being that it might bring us more vacations in the New Year.

Today, I make my own luck.  It’s called New Year’s Eve Triple Luck Appetizers. A perfect blend of flavors that will have your taste buds feeling happy, healthy and ready to celebrate the New Year.

To get started you’ll need the following ingredients:

Appetizer #1. Blue Cheese and Chimichurri Steak Crostini

1 pound bite sizes sirloin tips

1 loaf French baguette

1/4 cup Orange Infused Bari's Balsamic Vinegar

1/2 cup crumble blue cheese

1 tablespoon of milk

For the chimichurri sauce:

1/2 cup parsley

1/2 cup cilantro

1/4 cup oregano

2 garlic cloves

2 tablespoon tepin pepper (find in Mexican groceries)

2 tablespoon sherry wine vinegar

1/2 cup Bari's Garlic Infused Olive Oil

Salt and pepper to taste

 

Directions:

Get Started: Preheat oven 350 degrees

Step 1: Prepare baguette (Easy)

·        Slice baguette 1/2 inch in diagonal

·        Place baguette in oven and bake for 8-10 minutes or until toast. Remove and let rest.

Step 2: Prepare balsamic vinegar

·      In a small sauce pan pour Balsamic Vinegar, bring to a boil and reduce to a low summer until thickened, set a side.

Step 3: Prepare chimichurri sauce

·        In a food processor pour all the chimichurri ingredients and blend them until all is well incorporated, set a side.

Step 4: Prepare blue cheese

·        In a sauce pan place blue cheese and milk bring to a simmer, stirring frequently until cheese is melt, set a side

Step 5: Prepare steak

·        Heat a grill pan.

·        Season the steak with salt and pepper

·        Grill the steak tips 2 minutes per side, set a side.

Step 6: Plate the appetizer

·        Spread the blue cheese sauce on toast bread

·        Top with a piece of steak

·        Drizzle with the reduced Balsamic Vinegar

·        Add chimichurri sauce to taste

Appetizer #2. Cherry Tomatoes and Avocado Crostini

1 loaf French baguette

1/2 cup red and yellow cherry tomatoes chopped

1/4 cup chopped fresh basil

1/4 avocado chopped

1 garlic clove finally chopped

3 tablespoon Bari's Koroneiki Infused Olive Oil

Salt and pepper to taste

 

Directions:

Get Started: Preheat oven 350 degrees

Step 1: Mix ingredients

·        Mixed all ingredients in a small bowl and set a side

Step 2: Prepare bread

·        Sliced 1/2 inch diagonally the bread and toast on the oven at 350 degrees

Step 3: Plate the dish

·        To prepare arrange first the bread on a platter and spoon each crostini with the tomatoes mixture
