Mom's Awesome Cacciatore

1 onion

1 clove garlic
-
1 carrot stick
-
1 celery stalk

1/4 cup BARIĀ® Sun Dried Tomatoes in Oil, Julienne cut

1 skinless chicken, cut into pieces, or 6 boneless chicken breasts

4 tablespoons BARIĀ® Fruity Extra Virgin Olive Oil

1 can tomatoes (14 oz)

1 small can tomato paste
-
1 can chicken broth (14 oz)

3 sage leaves
-
1 cup fresh mushrooms, chopped

1/2 cup red or white wine (you're choice)

Kosher or sea salt and cracked black pepper
Preheat your oven to 350 degrees.
Finely mince onion, garlic, carrot, and celery and then sweat in the olive oil in a large dutch
oven or saute pan over medium low heat. After about five minutes add the sun dried tomatoes and cook
for about five minutes more.
Raise the heat to medium high and brown the chicken until it is white on all sides. Puree the canned
tomatoes and tomato paste in a food processor and add these to the chicken along with the broth, sage,
mushrooms, and wine
Cover and cook for 90 minutes to 2 hours in the 350 degree oven. Serve and enjoy.
Baked Polenta goes great with Mom's Awesome Cacciatore.
