 Mar Y Tierra Kabobs

A taste of land and sea.

How much did you eat over the Holidays?  If you are like most people, then you may have let yourself go this season with one too many slices of dessert, an extra helping of stuffing and a few less trips to the gym.  Last year has come and gone and the New Year is upon us.   It is time to get yourself back on track with my Mar Y Tierra Kabobs (In English we say, ‘land and sea’) topped with an Avocado dipping sauce.  Lose the weight – not the flavor – with the hearty and healthy goodness of these kabobs. It will be sure to jump start positive eating habits in 2017.

 To get started you’ll need the following ingredients:

 #1. Mar & Tierra Kabobs

Bari’s Jalapeño Infused Olive Oil

1 pound large shrimp

1 pound of sirloin or any other meat of your preference

1 pound of chicken thighs or chicken breast

Skewers

1 large Red onion

1/2 cherry tomatoes

1 Zucchini

Salt pepper

 

#2. Avocado dipping sauce

1 large avocado

Half cup of fresh cilantro

Half cup of fresh basil

2 tablespoon of grated Parmesan

1 garlic clove

Salt and pepper to taste

1/2 cup of Bari’s Jalapeño Infused Olive Oil

 

 Directions:

Get Started: Heat up the Grill or Iron Skillet (if it is too cold outside for the Grill)

Step 1: Prepare Meat, Chicken & Vegetables

·        Cut the meat, chicken and vegetables into 1 inch pieces set a side in separate bowls

·        Coat with 2 tablespoon of Bari Olive Oil.

·        Add salt and pepper.

Step 2: Prepare Shrimp

·        Clean, devein and remove the shell off the shrimp.

·        Put in a bowl

·        Coat with two tablespoon of Bari Olive Oil, and set aside.

Step 3: Prepare Sauce

·        Take all the ingredients and put them into a food processor until creating a smooth sauce.

·        Add more Bari Olive Oil if needed, and set aside.

Step 4: Assemble the Kabobs for Grill

·        Alternate Meat Options with Vegetables to taste.

·        Grill the kabobs about 3 to five minute per side or until meat is cooked (make sure Chicken is cooked thoroughly)

Step 5: Plate the dish

·        Arrange the skewers in a serving plate and enjoy with the dipping sauce
