Pumpkins have nothing on these Peppers this Halloween season.
This Halloween season, turn on the latest episode of The Walking Dead in your kitchen and turn these delightful Peppers into frightful Jack O’Lantern Stuffed Peppers. The 1% of my Irish ancestry, who brought this carving tradition to America, carved turnips on all Hollow’s eve and placed an ember inside to ward off evil spirits.
When unwanted guests show up to your Halloween party this year – you can scare them away or welcome them in with this delicious delicacy.
Today – in place of turnips and pumpkins – we have peppers on the menu. Most young peppers are green in color, but you can also find orange, purple, red, yellow and brown that create a beautiful harvest blend.
To get started you’ll need the following ingredients.
1 lb. Ground Turkey (healthier alternative to Ground Beef)
4 Bell Peppers (multiple harvest colors)
1/2 cup uncooked rice (rinsed and drained)
1/4 Chopped onion
1 garlic head mince
1/2 tablespoon cumin
1/4 of water
1 can of dice tomatoes untrained
1 cup of shredded four cheese blend
3 tablespoons of Chipotle Bari Olive Oil
Salt and pepper to taste
Step 1: Carve-up the peppers (Prep time: 10 minutes)
a)Cut out the top stem portion, scrape out and discard the seeds and veins, and create the Jack O’Lantern faces for your display.
Note: You’ll want to save the stem portion for presentation.
Step 2: Heat oven, iron-skillet and boil water in a pot.
b)Pre-heat the oven to 350° and then set heat on iron-skillet to medium. (An iron-skillet is a cook’s best friend)
Step 3: Create stuffing
c)Season Ground Turkey, Cumin, Salt and Pepper in a bowl.
d)Drizzle into the skillet the Chipotle Bari Olive Oil featuring a bold flavor of smoked jalapeños. This will provide a bite to your entrée that will hook your guests time and again.
e)Add Onion and Garlic into skillet, then combine with the seasoned Ground Turkey. Mix well until Ground Turkey is cooked.
f)To your cooked Ground Turkey, add un-drained tomatoes, rice and water to the skillet.
g)Cover skillet and cook on low heat for 20 minutes, or until the rice is cooked.
h)In a separate pot, place peppers in boiling water for 5 minutes; then remove and place upside down on a paper towel.
Step 5: Layer stuffing in peppers
i)Take a spoon and place a small layer of the stuffing into the pepper, then add a second layer of shredded cheese.
j)Repeat this process until the pepper is filled to top.
Step 6: Cook stuffed peppers (25 minutes)
k)Set the stuffed peppers – filled with stuffed mix – on a baking sheet and place into the oven.
l)Cook Jack O’Lantern Stuffed Peppers for 20 minutes at 350°.
m)Pull out the peppers and sprinkle final layer of cheese; then return to oven for final 5 minutes.
Note: Let peppers cool for 5 minutes after removing from oven.
You do not have to be stingy with these Jack O’Lantern Stuffed Peppers, as one pepper will fill you, your guests and the spirits to the core. (Serve size: 1 pepper per person)
Send the souls in your neighborhood into all Hollow’s night with a full stomach rather than a burning coal to light their way; giving them the energy to frighten away the evil spirits.
These peppers might even provide Carol from the Walking Dead a delicious scare. Just remember to place the knife directly in the forehead to put these Jack O’Lantern Stuffed Peppers to rest – and hopefully in your mouth.
