Our Glazed Acorn Squash provides a perfect blend of woodsy-sweet goodness with the deep red, orange and yellow colors of the leaves on the trees in your neighborhood. 

Impress your guests on Thanksgiving Day with this beautiful and delicious appetizer or side dish display.  Top the dish with blackberry and vanilla balsamic to give a beautiful dark color with the glazed shallots. Then, Garnish the acorn squash with pomegranate seeds to give a contrasting color and a touch of freshness. Finally, your flavor journey will be complete when you add a woodsy touch of walnuts to bring a crunchy sensation.  The Glazed Acorn Squash is packed with enough hearty flavor to eat by itself, so make sure to share with friends.

INGREDIENTS:

Glazed Acorn Squash

2 – Acorn Squashes

2 – Shallots

1 Tablespoon – Honey

¼ Cup – Pomegranate Seeds

¼ Cup – Chopped Walnuts

2 Tablespoon – Bari’s Koroneiki Extra Virgin Olive Oil (EVOO)

2 Tablespoon – Bari’s Blackberry Vanilla Balsamic Vinegar

 

 

 INSTRUCTIONS:

Step 1: Heat the oven 450 Degrees

Step 2: Prepare Squash

·        Cut the squash about 2-inch slices

·        Remove the seed and leave the skin on

·        Peel and slice the shallots

Step 3: Prepare Glaze

·        In a small bowl, mix the honey, balsamic vinegar and olive oil.

Step 4: Bake Squash

·        Arrange the slices in a large baking sheet

·        Drizzle the mixture and shallots slices, toss to coat.

·        Bake for 40 minutes

·        After initial 20 minutes, add the chopped walnuts and bake for another 20 minutes.

Step 5: Present Dish

·        Arrange in serving plate.

·        Garnish with pomegranate seeds.
