 Chipotle Huevos Rancheros with Fried Plantains 


Bring a little happiness to your morning!

The next time the chef in your home asks, “how you would like your eggs prepared?” Make sure you respond by saying, “I would like huevos rancheros, please!”  These “rancher’s eggs” are a comfort food to many people in the Latin community.  There is nothing better in the morning to break open a perfectly prepared yoke – not too hard, but just soft enough that the orange color of the yoke flows through all the flavors on the plate.  This morning meal provides much better flavor than the traditionally prepared scrambled, sunny-side-up, or over-easy egg. 

Today, in honor of Cinco de Mayo, spice up your life with Chipotle Huevos Rancheros.

To get started you’ll need the following ingredients:

Chipotle Huevos Rancheros

Bari’s Chipotle infused Olive Oil

2 – Large eggs

1 large – Plantain

1 can – Whole black beans

Corn tortillas

1 – Large avocado

2 – Roma Tomatoes

1 – Yellow onion

1 – Garlic head

½ –Green bell pepper

1 – Jalapeño

½ cup – Fresh cilantro

¼ cup – Mexican style shredded cheddar jack cheese

2 – Scallions for garnish (chopped)

Mexican "queso fresco"

Mexican sour cream (crema)

 

 

 

 Directions: 

Get started: Heat up iron skillet to medium high.

Step 1: Prepare black beans

·        Slice 1/4 cup of an onion.

·        Add 2 tablespoon of Bari's Chipotle infused Olive Oil to a hot skillet.

·        Cook onion for 3 minutes.

·        Add the black beans and cook for 15 minutes stirring occasionally.

·        Add salt and pepper to taste.

·        Cover and remove from stove.

Step 2: Prepare plantains

·        Preheat a large skillet with 2 tablespoon of Chipotle infused Olive Oil

·        Peel the plantains and slice them lengthwise into thin pieces.

·        Fry sliced plantains in the skillet until brown and tender.

·        Remove from skillet and drain the excess oil with appear towels.

Step 3: Prepare eggs

·        Heat up skillet to medium high heat.

·        Then, add 2 tablespoons of Bari’s Chipotles infused Olive Oil.

·        Chop tomatoes, green bell pepper, ½ cup of an onion, chop half of jalapeño, cilantro and place into skillet.

·        Cook vegetables, stirring constantly for about 10 minutes.

·        Add salt and pepper to taste.

·        Lower the temperature and add two large eggs on top of the sauce and cover immediately with a lid,

·        Allow to cook until desire consistency in the eggs.

Step 4: Prepare dish

·        To arrange the plate, warm up two tortillas and layer them in an serving plate

·        Add the eggs with the sauce on top of tortillas with some shredded cheese

·        Garnish with scallions

·        Add beans on the side and plantains.

·        Enjoy with slice avocado, some queso fresco and crema
