Chicken Skewers and Fruit Kabobs


In 1776, the declaration of independence was signed by the founding fathers in order to form a more perfect union, establish justice, insure domestic tranquility, provide for the common defense, promote the general welfare, and secure the blessings of liberty to ourselves and our posterity, did ordain and establish the constitution for the United States of America.

With these words, WE, the people began our road to freedom from Great Britain.  What a young nation learned was that there is no peace without justice and there is no justice without a fight.  To the men and woman who serve and preserve the freedoms, liberties and traditions shared by Americans throughout our 241 year history, we thank you.

Chipotle Chicken Skewers

Chicken thighs 

1/2 red onion

1 zucchini 

1 package baby Portobello mushrooms 

1 Chile ancho (Chile ancho can be found in the Latin area of grocery stores with the other spices)

2 tablespoon Chipotle dry rub

1 tablespoon dry oregano 

1/2 tablespoon ground cumin 

Garlic clove 

1 teaspoon of sugar

1 teaspoon of salt 

Bari’s Chipotle Infused Olive Oil 




Chipotle Chicken Skewers

Step 1: Prepare marinade

  • Bring to a boil a small pot with water

  • Add the Chile ancho

  • Let it simmer for 20 minutes

  • Remove Chile ancho from pot and let it cool.

  • Reserve the water.

  • Cut Chile in half and wash it with plenty water making sure to remove all seeds.

  • Put in a food processor with the all the rest of dry spices, garlic head and 1/4 of the remaining water and two tablespoon of Bari’s Chipotle infused Olive Oil.

  • Process until create a thick paste.

  • Remove and set aside.

Step 2: Prepare chicken

  • Discard all the extra fat off the chicken thighs

  • Cut into 1 inch and put it in a large bowl

  • Add the marinade mixture

  • Mix well making sure all the chicken is fully cover.

  • Let it rest in the fridge for 20 minutes. 

Step 3: Prepare vegetables

  • Slice zucchini, cut onion into chunks

  • Put in a bowl with the mushrooms

  • Drizzle with a tablespoon of Olive Oil

  • Season with salt and pepper. 

Step: 4: Prepare Skewers

  • Arrange the chicken and vegetables in skewers

  • Turn on the BBQ and Grill away!

  • Cook chicken thoroughly.





Independence Day Fruit Kabobs

Watermelon cut into 1 inch cubes

Slice bananas


Blue berries 

Fresh mint


Blackberry Vanilla Bari's Balsamic Vinegar 


Independence Day Fruit Kabobs

Step 1: Prepare glaze

  • Bring to a boil 1/2 cup of Balsamic Vinegar

  • Reduce to low and simmer for 20 minutes.

Step 2: Prepare fruit

  • Wash the fruit

  • Cut into bite size and put into a bowl.

  • Chop the fresh mint

  • Add it to the fruits.

Step 3: Prepare Kabobs

  • Arrange the fruit in the toothpicks alternating the strawberries from watermelon, then bananas and blueberries

  • Place in a serving plate

  • Drizzle with the reduce Balsamic Vinegar.
