The greatest achievements in food are when colors and flavors come together and form a work of art – something you can post on your Instagram.  My favorite colors to decorate a recipe are with the soft pink in shrimp, the deep red in bell peppers, the shades of white in mushrooms and the luscious greens of basil and spinach.  When we prepare a dish, flavor is as important as making sure the colors of our dish excite our sense of smell and our sense of sight.

Tortellini Pasta with Shrimp and Vegetables is a wonderful dish to present an array of colors.  It is a very light and sociable dish – perfect for lunch or a dinner with family and friends.  The mix of colors makes it great for your next Instagram post. The difference between your Instagram and the recipe – is that you get to eat the pasta.

To get started you’ll need the following ingredients:


  • 1 package – Spinach tortellini (8 oz.)

  •  1 lb. – Large shrimp (peeled and deveined)

  •  1 package – Mushrooms, slices.

  •  1 – Red pepper cut in slices

  •  1 cup – Yellow cherry tomatoes

  •  1/2 of bag – Fresh spinach (8 oz.)

  •  1 small – Onion (slices)

  •  1 cup – Heavy cream

  •  1/2 cup – Shredded Parmesan cheese

  •  1/4 cup – Fresh basil (chopped)

  •  1 clove – Garlic (slices)

  •  Salt and pepper to taste

  •  Bari’s Organic Olive Oil

 

 
Directions:

Step 1: Cook tortellini

a)    Cook tortellini in a large pot of boiling water according to the package directions.

b)    Drain.

c)    Drizzle with Bari’s Organic Olive Oil, and set aside.

 
Step 2: Prepare shrimp

a)    Heat up a large skillet with two tablespoon of Olive Oil.

b)    Season shrimp with salt and pepper.

c)    Cook shrimp stirring occasionally until pink, about 5-8 minutes.

d)    Remove from skillet, and set aside.

 
Step 3: Prepare vegetables

a)    In the same skillet, add 1 tablespoon of Bari’s Organic Olive Oil.

b)    Add onions, garlic, spinach and red pepper, cook for 3-5 minutes.

c)    Add heavy cream, stir for another 3 minutes

d)    Add Parmesan cheese and shrimp.

 

Step 4: Bring ingredients together

a)    Add the tortellini with tomatoes to the vegetable and shrimp, and then mix well.

 

Serve with crusty Italian bread and your favorite wine. Enjoy!
