To get started you’ll need the following ingredients:
Bari's Lemon Olive Oil
Eggs (one for every avocado)
Paprika, salt and pepper to taste
Preheat oven at 425 degrees.
Step 1: Prepare Avocado
·Cut the avocado in half and remove the pit.
·Scoop out a spoon full of avocado to make space for the egg.
·Drizzle the avocado half with the Bari’s Lemon Olive Oil
·Crack the egg inside the avocado.
·Place avocado inside baking dish making sure it is tight.
·Bake for 15 to 20 minutes or until desired egg texture.
Step 2: Prepare Vegetables
·While the egg is baking, heat up the skillet with 1 tablespoon of Bari’s Lemon Olive Oil.
·Cook the mushroom and cherry tomatoes.
Step 3: Prepare Bacon
·While the egg is baking, heat up skillet and cook the bacon to desired texture.
·Remove bacon from skillet and chop into tiny pieces.
Step 4: Plate Dish
·Place baked avocado next to vegetables together.
·Sprinkle chopped bacon onto avocado egg.
·Sprinkle with paprika, salt, pepper and queso fresco.
