In my mind, avocados are the most versatile fruit on the planet.  What other fruit exists where you can get ready for your day at work with an anti-wrinkle eye treatment, a body mask, moisturizer, and a deep-conditioning hair mask – then take the same ingredient to figure out what is for breakfast?  Yes. It is possible to look good on a full stomach.

Avocados are the fruit of the tree that provide cholesterol and sodium-free flavor that fits into most healthy eating plans.   This oily and creamy fruit provides a pleasant fresh vegetable infused butter taste – which is why it mixes w ell with almost any dish. 

Today, share in the joy of an Avocado Baked Egg.  If you are in a morning rush or looking for a quiet sit down, this is a simple and delicious breakfast.  It is sure to indulge your taste buds with the same avocados you might use to prepare your beautiful morning appearance.  That is, one avocado in your face and another avocado on your face.

 To get started you’ll need the following ingredients:

Bari's Lemon Olive Oil

Large avocado

Eggs (one for every avocado)

Cherry tomatoes

Bacon

Mushrooms

Queso fresco

Paprika, salt and pepper to taste

 

Preparation: 

Preheat oven at 425 degrees.


Instructions:

Step 1: Prepare Avocado

·        Cut the avocado in half and remove the pit.

·        Scoop out a spoon full of avocado to make space for the egg.

·        Drizzle the avocado half with the Bari’s Lemon Olive Oil

·        Crack the egg inside the avocado.

·        Place avocado inside baking dish making sure it is tight.

·        Bake for 15 to 20 minutes or until desired egg texture.

Step 2: Prepare Vegetables

·        While the egg is baking, heat up the skillet with 1 tablespoon of Bari’s Lemon Olive Oil.

·        Cook the mushroom and cherry tomatoes.

Step 3: Prepare Bacon

·        While the egg is baking, heat up skillet and cook the bacon to desired texture.

·        Remove bacon from skillet and chop into tiny pieces.

Step 4: Plate Dish

·        Place baked avocado next to vegetables together.

·        Sprinkle chopped bacon onto avocado egg.

·        Sprinkle with paprika, salt, pepper and queso fresco.

·        Serve with love and a smile.
